Sweet Potato Shepherd’s Pie

2 sweet potatoes

3 Tbsp water

1 onion chopped

2 carrots, diced

1 lb lean turkey ground meat

3 Tbsp flour

14 ½ oz beef broth

1Tbsp cornstarch

Salt and pepper


Preheat oven to 400 degrees. Peel potatoes, chop and boil until tender. Once tender, pour in the water, and mash the mixture until smooth.  Saute onion and carrots until tender. Add in the turkey; Cook until browned. Season with salt and pepper.  Add the flour and broth. Continue stirring until warmed. Stir in the cornstarch. Pour the cooked ingredients into a casserole dish. Top with mashed sweet potatoes. Bake for 30 minutes.
