Southwest Stuffed Peppers

I have an awesome new recipe for you today!! Southwest Stuffed Peppers!! Mexican food lovers will especially like this recipe!!


This recipes is super easy and really makes a lot of filling!!

Brown the turkey then add taco seasoning and salsa.


Next, add corn and black beans


Combine together and cook until heated through


Clean and slice peppers. Coat with olive oil and bake for 25 minutes.


Add cooked brown rice to filling mixture.


Fill each pepper with filling and top with shredded cheddar cheese. Bake until cheese is melted.


Messy, but good!!!

Southwest Stuffed Peppers

Olive Oil
1 lb lean ground turkey breast
1 cup chopped onions
1 package taco seasoning
2 cups of cooked brown rice
4 organic bell peppers, halved and seeds removed
1 can of black beans, drained & rinsed
½ cup of organic frozen corn
1 (15 -16 ounce) jar of salsa
Shredded Cheddar Cheese

Pre heat the oven to 400 degrees. Lightly coat the peppers with olive oil and roast in a baking dish about 20-25 minutes just until cooked thru. Remove the peppers from the oven and allow to cool until you can handle them.

While peppers are in oven, cook the ground turkey and chopped onions over medium-high heat. Once cooked, add taco seasoning, black beans, corn, cooked rice and jar of salsa; mix well. Cook an additional 10 minutes.

Carefully spoon the turkey mixture into each half of the bell peppers and place back into the baking dish. Cook the peppers for another 15-20 minutes or until the peppers are cooked all the way thru. Before removing from the oven sprinkle the tops of each pepper with shredded cheddar cheese. Place back into the oven just until the cheese has melted.


Chicken Zucchini Penne

As we started the New Year I could feel my body literally craving vegetables! I had eaten so much junk over the holidays; it was time to start cooking and eating CLEAN again.


This recipe came to mind because it is so easy to prepare, full of veggies and whole goodness! Plus it tastes DELICIOUS!! I have really come to love the taste of warm cherry tomatoes just as they pop open.




Start by cutting up all of the chicken.


Add whole wheat penne pasta to boiling water, cook until soft.


Saute the chicken with garlic and red onion with olive oil.


Cut up the zucchini and prepare to saute.

Cook together until zucchini is soft and tomatoes have popped.


Serve over whole wheat penne pasta.



Chicken Zucchini Penne

Serves 4

4 chicken breasts – cut up

2 zucchini

1 red onion

Container of grape tomatoes (I used 2)

2 cloves of garlic

2 cups of whole wheat penne pasta

Boil water and add pasta. Saute 12 oz chicken in 2 tsp olive oil with 2 zucchini, sliced,  1 red onion sliced, container of grape tomatoes and 2 cloves of garlic. Serve on wheat penne pasta.

Goals For the New Year – 2015

I am so excited to set new goals this year! Last year my goals did not exactly go as planned, but I have a really good feeling about this year.

I decided to set 10 goals for myself this year, and I really tried to incorporate all areas of my life into these goals.

So, along with focusing on my one word for the year (or in my case 2 words), here are my 2015 goals:




1. Read 52 personal development books this year, 1 a week.


2. Read 2 books a month out loud with the kids, along with a daily devotion.


3. Follow a budget and work towards becoming debt free.


4. Complete from start to finish 5 Beachbody programs: 21 Day Fix, Insanity Max 30, Les Mills Pump, TBD, TBD


5. Grow my social media accounts to a combined 50, 000 followers.


6. Complete all of the Chalene Johnson online courses: Instagram Impact, Courageous Confidence, Smart Success Academy, Marketing Impact Academy


7. Earn the free vacation provided by Beachbody.


8. Complete all the She Reads Truth 2015 Bible Studies.


9. Spend more quality, joyful time with my family – including 2 date nights a month with Mike.


10. Blog at least 3 times per week.


This will be a busy, but productive year! I can’t wait!

Changes to Your Life in 2015 With Just One Word

Every year I make this long list of resolutions for the New Year; you know the list – the one with all things we want to change in the upcoming year. I am sure you are also familiar with how this list usually pans out, we may stick with it for a couple of weeks or maybe even a month and then we start to slide back into our comfortable existence giving up hope on those resolutions only to repeat this process year after year.


Well this year I vow that things will be different! I will change my life in 2015 and I am not making a list of resolutions; I am going to change my life with only ONE WORD!!


This year I am going to do something about ONE thing this year instead of  nothing about everything.


Here is the idea:

Choose just one word that you hope must represents what God wants to do in you, and focus on it for an entire year. This single act will force you to see your actions clearly and allow you to concentrate on your efforts. As you concentrate on your word for an extended amount of time you will position yourself for God to form your character at a deep, sustainable level. I advise you to pray about what your one word should be instead of just randomly picking a word. This word should be something that will enhance your life and force you to make changes for the better.


One word examples are: Faith, Rest, Compassion, Reflect, Obey, Trust, Grace, Workmanship, Focus, Boldness, Influence, Humility, Holiness, Discipline, Give, Forgiveness, Gratitude, Joy, Consistency, Stewardship


I have really been praying my word for 2015 and I decided on INTENTIONAL.

There are times when I sit back and reflect on my day and I realize that I am not living intentionally. So much time passes with my family and I don’t feel like I am 100% present. There are days when I feel like I am just giving the minimum to the people in my life; almost like I am only doing enough to get by. That is going to change this year. I want to live with a purpose; I want to be intentional with each day – not just let the day fly by me!


The whole point of this post was to pick only ONE word, but I am going to sneak in a second word. JOY!!

The year I want our family to experience more laughter together! Time passes so quickly and I want to enjoy spending time with my family as much as possible.
